Featuring Chef Cluade Guermont, French born and French trained, executive chef from Normandy France

Presenting a special wine pairing of French food and organic and biodynamic wines. The wines are generously provided by the Fox and Hound Wine and Spirts store located in New Paltz New York in conjunction with T. Edward Wines. Wine introductions presented by Mr. Kenny MaGuire owner of Fox and Hound. The wines will be paired with a five course meal created and prepared by Chef Cluade Guermont. Chef Guermont was an instructor at the Culinary Institute of America for 16 years. He owned and operated La Pavillion located in Poughkeepsie New York for 29 years. Chef Guermont prepares the most memorable Napoleon you will ever have!

Agenda:

  • A sparkling beverage and a walking tour of the farm with our farmer; then we sit down to dinner.

Arrival:

  • Sparkling Hard Cider - Metal House Cider, Ulster Park, New York.

Menu:

First Course:

  • Salmon Gravlax, Farm Herbs, Beet Tartar, wine pairing - 2017 Bodegas Ostatu Rioja Blanco Alavesa, Spain.

Second Course:

  • Grilled Asparagus, Radish, Young Greens, Shallot Vinaigrette wine pairing 2016 Manoir de la Tete Rouge, Saumer Blanc, Loire Valley, France.

Third Course:

  • Trout Paupiette with local mushrooms, Braising Greens, Brown Butter sauce, wine pairing 2017 Friend and Farmer Red, Tempanillo, Castilla-La Mancha, Spain.

Fourth Course:

  • Grilled Leg of Lamb, New Potatoes, Snap Peas, Spring Onions, Garlic, Cider Demi-Glace, wine pairing 2013 Robert Sinskey Vineyards, POV Cabernet Blend, Carneros, California. 

Fifth Course:

  • Strawberry Napoleon, coffee or tea.

All vegetables from Taliaferro farms. All pasture raised meats sourced from local farms; Full Moon Farm, Bradley Farm, and Hudson Valley Harvest. Fish from Pura Vida fisheries, All organic dairy products from local dairy farms.
